They are referring to the Basilica of St Denis, a large medieval church in Paris. St Denis was the Bishop of Paris in the third century. K
St. Kilda - a visage of St. Kilda is carved into the wall of the old St. Kilda church that Bree and Roger explore while at the old St. Kilda churchyard. (DIA, chapter 5) There does not actually appear to have ever been a saint called St. Kilda. One explanation for the name is that it arose from the Norse words sunt kelda meaning sweet water, which were used to describe the water from a spring. People mishearing the words as 'St Kilda' then wrongly assumed that the spring was dedicated to a saint
L
St. Lawrence the Martyr - Father Fogden tells Claire that his sheep Arabella was killed by sailors and roasted over a gridiron just like St. Lawrence the Martyr (V, chapter 50) St. Lawrence lived in the 3rd century and was a deacon to Pope Sixtus II. When the Prefect of Rome ordered Lawrence to bring him all the riches of the church, Lawrence distributed all the riches amongst the poor, and then brought the Prefect the poor, crippled, blind and suffering, saying these were the true treasures of the church. The Prefect was not amused and sentenced Lawrence to death by being tied to an iron grill over a slow fire and roasted slowly. God gave Lawrence so much strength that he didn't feel the flames and even joked about needing to be turned over.

V
St Vitus - When Fergus is itching to get involved with the action at Prestonpans, Claire describes him as "fidgeting to and fro like a hoptoad with St. Vitus's dance" (DIA, chapter 36) St Vitus was a Christian martyr from Sicily. In the late Middle Ages people would celebrate his feast day by dancing in front of his statue and this led to him becoming the patron saint of dancers and actors, and also epileptics. The neurological disorder, Sydenham's chorea which is characterised by rapid, uncontrolled movements, was named St Vitus's dance.
